Whey Protein Isolate (WPI) undergoes specialized treatment to remove increased amounts of fat and lactose, with an average protein content of 90%. Microfiltration, a more costly process, best preserves the integrity and presence of bio-active protein fractions, determining the protein’s quality. The whey, initially ultrafiltrated, undergoes progressive filtration using membrane filters, eliminating undesirable particles like minerals, lipids, and lactose.
